Do you know Amazake? It's a Japanese traditional sweet and fermented drink. Actually there are two types of amazake. One is made from sake lees and sugar and contains alcohol. The other is made from rice,water and rice malt (Kome Koji) and non alcoholic. As you know, we also use Kome Koji when we make miso, soy sauce or mirin and so on.

Today I'm going to show you my recipe which is made with Kome Koji because it's healthier than the other! The one is called "IV drip to drink" in Japan haha that's funny isn't it? The reason is that it's nutrient rich! It has lots of vitamin B, dietary fiber, amino acid, enzyme and glucose. You can get much benefit; improving your digestion, boosting your metabolism, anti-aging or improving your immune system and skin and so on. But please make sure that you don't drink it too much per day because it contains much glucose.

It's so easy to make! You can drink it after you dilute it with hot water or cold water!

Also you can use it for cooking instead of sugar!

今回は米麹で作る甘酒のレシピです！甘酒には酒粕から作られるものと、米麹から作られるものの２種類があり、前者はアルコールを含み砂糖が使われることが多いです。”飲む点滴”とも言われる後者は、ビタミンB、食物繊維、アミノ酸、酵素、ブドウ糖などを含み、美容効果、整腸作用、免疫力向上、新陳代謝促進などの効能があると言われています! ただし、ブドウ糖を多量に含むので、飲みすぎには注意です。一日おちょこ一杯程度が良いとされています！

最近はスーパーなどでも甘酒を見かけるようになりましたが、精白された白米から作られたものが多く、そして値段が高め…そこで、簡単にご家庭でできる、玄米甘酒の作り方をご紹介します！お湯で薄めて飲んだり、お菓子作りに砂糖の代わりとして使ったりして是非自然の甘みを楽しんで下さい！お米と米麹だけでこんなにも甘くなるなんて自然の力は本当に素晴らしいなといつも作るたびに感動します。
